WHEN SHEEP GRAZE ON
SALTY GRASS
Sheep raising is one of the most widespread
agricultural activities in this region. Sheep
and lambs graze on unpolluted grass in the
Gorski Kotar region as well as in the Primorje
region. In both regions, young lamb
is a specialty offered to
gourmets in
many
restaurants.
Lamb is most often
prepared on the grill (in
Gorski Kotar) and under
a bell or pod pekom (in
Primorje). Both ways
should be tasted. The meat
of lamb from Gorski Kotar
is fatter and richer than
lamb from Primorje,
due to the lush
mountain pastures. Lamb
from the islands of Primorje is
characterized by leaner meat but also
a unique flavor from aromatic herbs, with
the mild fragrance of the sea.
Due to the contact between the two climate
zones, Mediterranean and continental, the
Kvarner islands, especially Cres, abound in a
wide variety of flora. On the island of Cres,
lambs graze on approximately three hundred
different types of aromatic plants and herbs.
When they are thirsty and no fresh water is
available, they are known to drink seawater.
