Housewives and restaurant cooks have been
preparing and serving homemade pasta for a
long time. On the islands and coast, the best
knownmost common local type of pasta is
known as šurlice. The dough is rolled out, cut,
shaped, boiled and topped with sauces or other
foods. On the island of Krk, bašćanske šurlice
are served with lamb goulash, but they are also
good with other
dishes and with
seafood.
As an
accompaniment to certain dishes, valjušci or
gnocchi are prepared in both Primorje and
Gorski Kotar. In Gorski Kotar, valjušći valjušci
are served with game, which also goes well
with bread dumplings. The influence of Italian
masters is evident in both Primorje and Gorski
Kotar, where lasagna and spaghetti are the most
popular forms of pasta.
In some places on the islands, aromatic herbs
such as fennel are used in preparing
pasta. It is very common to find
pasticcio or canelloni filled
with various ingredients,
to which the creativity
of domestic cooks
has been added.
