Fish is marinated in a variety of ways. In the
past, fish was marinated in order to preserve it
until it could be eaten. Since marinated fish is
exceptionally delicious, today we consider it a
delicacy today. We shall present a special recipe,
according to Nona (Grandmother) Ruža of
Rijeka.
Clean the fish, preferably mackerel or fresh
sardines, although other fish are possible, and
cut them into pieces. Dredge in flour and fry in
olive oil or a mixture of oils. When the fish have
fried to a golden brown, remove them from the
frying pan and arrange place in a bowl. Strain
the oil in which the fish were fried and use it to
fry 2 to 3 chopped onions until they turn yellow.
Add wine vinegar (slightly diluted with water)
and pure olive oil, in a ratio of two parts vinegar
to one part oil. Add salt, peppercorns and sprigs
of rosemary. After the mixture boils, simmer for
another ten minutes over low heat. After the
marinade cools thoroughly, pour it over the fried
fish in order to cover it completely with the liquid
and fried onions. Before serving, allow the fish to
marinate for at least two days in order to absorb
the marinade.
