There are several ways to prepare the finest white-
fleshed fish. We have already mentioned
two, and fish is also prepared by
roasting it in salt, on the grill, or
under a bell. Many fine fish
aremarinated or combined
with others in a fish stew,
brodet, although as a rule
marinades are tastier with
dark-fleshed fish (sardines,
mackerel or tuna). Brodet is an
art. Each cook has his own recipe,
his own “little secret.” We assure you that
they are all so good that you will want to lick
your fingers. The queen of the dark-fleshed fish
is tuna. It is basic to the diet of the Kvarner
fishermen. The arrival of schools of tuna into
the bays and channels is announced from the
tall tunny lookouts. Tuna are known to gather
near the island of Cres, especially Valunski Bay,
Bakarski Bay...
FROMTHE BOTTOM OF THE SEA
TO THE PEAK OF
ENJOYMENT
Along the Kvarner coast live many types of
mollusks, such as cuttlefish, squid and octopus.
All are edible and very delicious but squid is the
most popular. During the season, squid can be
found throughout Kvarner, but a particularly
large number are caught around the island of
Susak.
